The value of an ace can change a hand's response to the next card. That is the central difference between a soft and a hard total.

Ace and 6 count as 17 when the ace is worth 11. If a 9 arrives, counting the ace as 11 would make 26, so the ace counts as 1 and the hand totals 16. The hand has not busted solely because the first way of adding the cards exceeded 21.
This calculation explains why 'soft' does not mean a higher payout. It describes a hand with an ace that can be valued differently. The dealer's hand and table rules still determine the outcome.
A 10 and 7 make hard 17. Taking a 9 gives 26; there is no ace to revalue, so the hand busts. Two hands displaying 17 before the draw have different consequences after exactly the same next card.
In Evolution's regular Blackjack, Hit, Stand, Double Down and Split are distinct player decisions. The ability to change an ace's value does not mean another card is always the right choice; the example is arithmetic, not a strategy recommendation.
Blackjack variants can add rules not present in the regular example. Evolution names several variants, and Pragmatic Play's Free Bet Blackjack shows a push-on-22 exception. Do not transfer that exception or a payout rate to every table.
The source page's live casino topic does not establish an Evolution table at 3999bd. The rule example remains useful because it identifies what to check: the cards, the dealer comparison and any variant-specific exception.
The ace can count as 11 for 17 or as 1 if a later card would otherwise push the hand over 21.
With a 10 and 7, the new total is 26 and busts in the regular example.
No. That is a named variant exception, not a general rule.
